There are some people for whom it is easiest to learn a complex program by reading a book. For me, the best way to learn to use programs is to do tutorials. Learning by actually walking through a tutorial is not only easier, you’ll retain it longer. I’ve been using Illustrator for a couple of years now, and I continually discover new and amazing things it can do. I thought I’d post links to some of the tutorial sites that have been very helpful to me:

• creativepro.com - one tutorial per month
• Smashing Magazine has a long list of Illustrator tutorials
• N-design Studio has a nice selection as well- visit his site just to check out the beautiful and unusual design if for nothing else. He has a nice WordPress theme too.
