Easiest Peanut Butter Cookies Ever

One of my favorite homeschool blog writers posted a peanut butter cookie recipe today. I read it just as dinner was finished cooking, so I jumped up and made this quick little recipe and we had warm cookies for dessert.

  • 1 cup peanut butter
  • 1 cup sugar (Can sub. 1/2 c agave or raw honey)
  • 1 egg, beaten

Mix all ingredients in a bowl and roll into 1” balls and place on cookie sheet a2-3” apart. Flatten with fork in ‘X’ pattern as usual. Bake at 350º for approx. 10 minutes, watch as cooking times may vary and they burn easily!

They were stinkin’ good.

I need to try this recipe next.

    Were they crunchy or chewy? Mike only likes crunchy.

    Depends a bit on how long you bake them but I’d say on the low end of the crunchy spectrum. So, there was some “chew” to the them, but I also could have baked them longer and made them smaller and flatter.
